The engraved words are those of <a rel=\"noreferrer noopener\" aria-label=\"Aymeric Picaud (opens in a new tab)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Aymeric_Picaud\" target=\"_blank\">Aymeric Picaud<\/a>, a twelfth century monk and pilgrim. He is quoted in the <em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Codex_Calixtinus\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">Codex Calixtinus<\/a><\/em> as saying that Estella had \u201cgood bread, excellent wine, plenty of meat and fish and every kind of happiness\u201d for pilgrims.
